Were you in Guangdong? Apparently chow mein is based on the Cantonese dish chaomian, although I wouldn't be surprised if the Americanized version has become very different.
"Time Is Tight" is one of the all-time great instrumental grooves. Try the Meters' "Cissy Strut" for another.
I was in Hong Kong which some may debate as being China but the food there is still Chinese. The cooking style is quite complex and right up there with French cooking.
One of my all time favorites. I like the back tracks of drum and bass. Here is John Mayer, who happens to write his stuff on a typewriter, with a little impromptu groove leading up to the Cissy Strut.
