So you like to eat goat? Did you learn to eat goat from your Filipino wife's family? "Kalding" is popular in my late parent's region of norther Luzon. It's rather an acquired taste.
Believe it or not my wife is not a fan. She won't eat lamb either. I was available during a rather unsavory visit to the middle east. Some bedouin offered some up. It's similar to lamb or mutton - has that "wild" taste. I grew up eating that sort of meat so I must have developed a taste for it early.
I like lamb in East Indian dishes and all. Rack-o-lamb etc. I don't particularly like kalding (goat). But there is a whole ritual of preparing (slaughter) of goat for a family celebration in the Philippines - and the USA.
